Birthday Poke

While in Charleston, after our delicious Charleston Crab House dinner, Ally and Johnny came back to MR for some cake and sunset action.

I have never been a big baker, way too much precision for this throw it together home chef. But for birthday’s, I decided to give it a shot. I consulted the google for some suggestions and mashed together a handful of recipes and was not disappointed!!

Semi-Homemade Lemon Poke Cake

1 box yellow cake mix

1 pack of lemon flavored jello instant pudding

3/4 cup oil

3/4 cup water

4 eggs

For the soaking sauce:

2 cups powdered sugar

1/3 cup lemon juice

2 Tbsp butter (melted)

2 Tbsp water

1) preheat oven to 350 and grease 2 disposable 8 x 8 aluminum baking pans

2) beat eggs until frothy (I don’t have an electric mixer, so I just used a fork). Add cake mix, pudding, oil and water. Mix to combine. Pour into greased baking pans. I only have room in my oven/air fryer combo for 1 pan, so I did 1 at a time. Bake for about 30 minutes or until toothpick inserted comes out clean. Meanwhile….

3) make the soaking syrup: combine butter, lemon juice, powdered sugar and water.

4) while the cake is still warm, use a skewer to poke holes all over and pour over 1/2 the syrup. As the cake cools, all that lemony, sugary deliciousness soaks in and you will taste it in every bite.
